What we actually mean by locally roasted

Every cafe in the country says locally roasted. Here is the specific, boring version of what ours means.

Our coffee is roasted forty minutes away, on a Tuesday, and it is in the shop on the Wednesday. That is the whole claim. We are not going to tell you about altitude.

Why it matters a bit, and only a bit

Coffee is best somewhere between five days and three weeks after roasting. Getting it quickly means we are drinking it inside that window rather than at the end of it. It is a real difference, but it is a smaller difference than whether the person making it is paying attention.

We grind to order, which slows the queue down by about fifteen seconds a cup. We have decided we are fine with that.

The refill

Filter coffee comes with a free refill if you are staying. This is not generosity. Somebody sitting in the window with a second cup is the reason the room feels like somewhere you would want to sit, and that is worth more to us than three dollars.
